Pour-Over Basics — Ratios, Grind and Pour Technique

Pour-over is the brewing method with the most variables and the least equipment. Here is what each variable actually does, which ones matter, and a starting recipe that works on the first try — plus how to read a bad cup and fix it.

Pour-over has the widest gap in coffee between how simple the equipment is and how complicated the instructions sound. A cone, a filter, a kettle and a scale, and yet the recipes read like laboratory protocols: bloom times, pour intervals, agitation, spiral versus centre pour, temperature to the degree.

Most of that is refinement layered on top of three variables that do almost all of the work. Get the ratio, the grind and the temperature roughly right and you will make good coffee immediately. Everything else adjusts it at the margins.

The three variables that matter

Ratio sets strength — how much dissolved coffee ends up in the cup. It is the easiest to control and the least likely to be wrong, because it is just two numbers on a scale.

Grind size sets the rate of extraction, and it is the variable that goes wrong most often. Finer grounds have more surface area and give up their solubles faster; they also slow the flow of water through the bed, which compounds the effect. This is why grind is the first thing to change when a cup is bad and the last thing to change when it is good.

Temperature sets how aggressively the water works. It matters, but the usable range is wide and most errors here are small compared with a grind that is off.

Notice what is not on the list: pour pattern, bloom duration, filter brand, dripper material. All of these do something. None of them will rescue a brew with the wrong grind.

A starting recipe

This works in a cone dripper — a Hario V60 or anything shaped like one — and it is deliberately unfussy.

  1. 20g of coffee, ground medium. About the texture of table salt.
  2. 320g of water at 92–96°C. That is a 1:16 ratio. Just off the boil is fine.
  3. Rinse the filter with hot water, discard the rinse, add the coffee, level the bed, tare the scale.
  4. Bloom: pour 60g and wait 45 seconds. The bed will swell and bubble. This is trapped carbon dioxide escaping, and pouring the rest through it would channel around the gas instead of through the coffee.
  5. Pour the remaining 260g in two or three additions, keeping the water level roughly halfway up the bed rather than letting it drain dry between pours.
  6. The whole brew should finish draining between 3:00 and 4:00. That is your feedback signal.

If it finishes much faster, grind finer next time. If it is still dripping past 4:30, grind coarser. Change one thing per brew.

Why time is the target, not the grind setting

Grinder settings are not comparable between machines, and photographs of ground coffee are close to useless — the same photograph looks like three different grinds under different light. What is comparable is how long the water takes to get through.

A cone at 1:16 draining in three to four minutes is extracting in roughly the right window. That single number tells you more than any description of particle size, and it is why the number is worth watching on a scale with a built-in timer rather than estimating.

The caveat is that time is a proxy, not the thing itself. A brew can hit 3:30 and still taste wrong if the grind is uneven — a lot of dust plus a lot of boulders averages out to a normal drain time while extracting badly at both ends. Reading a bad cup

The two failure modes taste distinct once you have met both.

Sour, sharp, thin, finishes quickly. Under-extracted. Not enough came out of the coffee. Grind finer, pour hotter, slow the pour down. Check the drain time first — a fast drain is almost always the cause.

Bitter, drying, harsh, lingers unpleasantly. Over-extracted. Too much came out. Grind coarser, drop the temperature a little, check whether the brew is stalling.

Weak but not sour. This is a ratio problem, not an extraction problem. Use more coffee for the same water, or less water for the same coffee. Do not change the grind.

The mistake almost everyone makes at least once is treating weak and sour as the same fault and adding more coffee to fix sourness. It produces a stronger sour cup.

The bloom, and why it is not optional

Fresh coffee holds carbon dioxide from roasting, and it releases it when hot water hits. If the whole pour goes on at once, that escaping gas physically pushes water away from the grounds and creates paths through the bed, so some coffee is over-extracted while some is barely touched.

Wetting the bed with roughly twice the coffee’s weight in water and waiting 30 to 45 seconds lets most of that gas out before the real brewing starts. Very fresh coffee — within a week or two of roast — blooms dramatically; coffee that is two months old barely moves, which is itself a useful freshness indicator.

Pour technique, in the order it matters

Saturate everything. The single most consequential thing your pour does is get every ground wet. Dry pockets contribute nothing but volume.

Keep the stream thin and controlled. A heavy stream digs into the bed, drives fines to the bottom and clogs the filter, which is how a brew stalls. This is the whole argument for a gooseneck: an OXO Brew gooseneck kettle or similar exists to make a thin stream easy to place, not to look good on a counter.

Pour in the centre, spiral out, stop short of the paper. Water poured directly onto the filter wall runs down it without passing through coffee. Leaving a centimetre of margin avoids that.

Do not let the bed drain dry between pours. Keeping water on it maintains a steadier temperature and a more even extraction than repeated wet-dry cycles.

Finish with a gentle swirl. Settling the bed flat as the last water drains gives a more even final extraction. It is a genuine improvement and also the smallest one on this list.

What to change when you change your beans

A new bag means re-dialling, and the two things that move most are grind and temperature.

Light roasts are denser and harder to extract. They generally want a finer grind, hotter water and a longer contact time. If a light roast tastes sour on your usual settings, that is expected rather than a mistake.

Dark roasts are more porous and give up solubles quickly. They want a coarser grind and cooler water, and they turn bitter faster than light roasts do.

Age matters too. Coffee two weeks off roast blooms less and often needs a slightly finer grind than the same beans did on day three.

What to buy first

If you are assembling a pour-over setup from nothing, the order is not the order most people follow.

Grinder first. It sets the ceiling on everything else, and the difference between a bad grinder and a decent one is larger than the difference between any two drippers ever made.

Kettle second. Control over the pour is the next real constraint, and a gooseneck is what provides it — see best gooseneck kettles.

Dripper last. They cost the least and differ the least. A good cone costs very little and will not be the thing holding you back.

Frequently asked questions

What coffee-to-water ratio should I start with?

Start at 1:16 — one gram of coffee to sixteen grams of water — which for a single large mug means 20g of coffee and 320g of water. That sits in the middle of the range most specialty roasters recommend and it is forgiving enough that small errors elsewhere do not ruin the cup. Move to 1:15 if you want it stronger and 1:17 if you want it lighter, and change only that number while you are comparing. Note that ratio sets strength, not extraction: a stronger brew is not a better-extracted one, and the two problems have different fixes.

How fine should I grind for pour-over?

Medium — roughly the texture of table salt, coarser than espresso and finer than French press. The more useful instruction is to grind to a target time rather than a target look: with a 1:16 ratio in a cone, aim for the whole brew to finish draining between three and four minutes. If it drains much faster than that, go finer; if it stalls past four and a half, go coarser. Different drippers and different filters want different grinds for the same time, which is why time is the reliable target and a photograph of grounds is not.

Does water temperature actually matter?

It matters, but less than grind and ratio, and the useful range is wider than the internet suggests. Roughly 92–96°C — just off the boil — covers almost everything. Hotter water extracts faster, so it helps with light roasts and with grinders that produce a coarse, uneven grind; cooler water slows extraction and can tame a dark roast that turns bitter. If you have no kettle with temperature control, boil and wait about thirty seconds, which lands you in range.

Why does my pour-over taste sour?

Sourness means under-extraction: not enough of the coffee dissolved. The three fixes in order of effectiveness are grind finer, pour hotter, and pour more slowly so the water spends longer in contact with the bed. Check the brew time first — if the whole thing drained in two minutes, the grind is the cause, and nothing else you change will matter as much. Adding more coffee makes the cup stronger but not less sour, which is the most common wrong turn.

Why does my pour-over taste bitter or harsh?

Bitterness usually means over-extraction: too much dissolved, including the compounds you do not want. Grind coarser first, then check whether the brew is stalling past four and a half minutes — a slow drain is the usual culprit and often points at either too fine a grind or a clogged filter. Water that is boiling rather than just off the boil can push a dark roast over the edge on its own. Note that harsh and bitter are not always the same thing: a thin, harsh, drying cup with no sweetness is often under-extracted rather than over.

Do I need a gooseneck kettle to make good pour-over?

You can brew good coffee without one, but it is the piece of equipment that most directly improves your control over the pour. A wide-spouted kettle delivers water in a heavy, unpredictable stream that digs channels through the bed and makes even saturation a matter of luck. A gooseneck lets you place a thin stream deliberately and stop it cleanly. If your budget covers one upgrade, put it on the grinder first and the kettle second.

Should I rinse the paper filter?

Yes, for two reasons that are worth separating. Rinsing removes papery taste, which is real but small and much less pronounced in good modern filters than it once was. More importantly, it preheats the dripper and the vessel, which stops the first pour losing several degrees to cold ceramic — and that temperature drop affects the cup more than the paper does. Discard the rinse water before adding coffee.
